Vegan Raspberry Oat Bars:

Ingredients:

  • 1 and 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 cup cold vegan butter
  • 1 cup frozen raspberries
  • 1/4 cup agave nectar
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350F.
  2. In a mixing bowl, combine the oats, flour, coconut sugar, and baking powder. Cut in the vegan butter until the mixture resembles coarse crumbs.
  3. Press half of the oat mixture into the bottom of an 8-inch square baking dish.
  4. In a separate bowl, mix together the raspberries, agave nectar, and vanilla extract. Spread the raspberry mixture over the oat mixture in the baking dish.
  5. Sprinkle the remaining oat mixture over the top of the raspberry layer.
  6. Bake the oat bars for 25-30 minutes, or until they are golden brown.
  7. Let the bars cool in the pan before slicing and serving. Enjoy!

Ingredients:

  • 2 cups frozen mango chunks
  • 1/2 cup coconut cream
  • 2 tbsp agave nectar

Instructions:

  2. Pour the mixture into a loaf pan and freeze for at least 4 hours.
